I've never been able to make good pancakes with my current cookware. They always stick, even though they are very nice Calphalon stainless steel pans. So, I got a small cast iron grittle, and used a pancake recipe from Vegan with a Vengence and this is the first pancake success I've had in a long time. I forgot to sift the flours, which probably would have made them even fluffier, but they were still good. I even diluted the last bit of batter with a little extra soymilk, and it made a very nice crepe type thing, which we filled with jelly and was enjoyed by Flo. They must have been tasty because the other three pancakes were eaten by Joe and Darren with no syrup or anything. I think they would freeze and toast well, too!
